Serves 4

Black beans are rich in proteins and amino acids used to repair and replace the amino acids in your organs.

Ingredients

2 tablespoons fresh parsley, minced

2 teaspoons chili powder

½ teaspoon salt

¼ teaspoon cumin

½ cup bread crumbs

¼ cup corn niblets

2 cups cooked black beans

½ medium red pepper, diced

1 tablespoon olive oil

1 small jalapeno or hot pepper, minced

½ teaspoon of dried oregano

2 cloves garlic, minced

1 small onion

½ cup whole wheat flour

Instructions

Set aside flour for coating on a small plate.

In oil, in a medium saucepan over medium heat, sauté onions, oregano, garlic, and hot pepper until the onions are translucent then add pepper and sauté for 2 minutes until the pepper is tender then set aside.

Mash black beans in a large separate bowl using a potato masher or just a fork then stir in the vegetables (including the corn), cumin, salt, chili pepper, breadcrumbs, and parsley. Mix evenly then divide and shape into 5 or 6 patties, and lay each patty in flour, coating on each side.
