Ingredients:

•         three cups of spinach, chopped

•         two cups of sweet potatoes, cubed

•         two cups of mixed mushrooms, quartered

•         two teaspoons of garlic, minced

•         one red onion, chopped

•         one cup of red bell pepper, chopped

•         one pound of Chorizo sausage crumbled

•         five cups of beef stock, low sodium

•         one tablespoon of lime juice

•         one teaspoon of sage

•         one tablespoon of tomato paste

•         one teaspoon of oregano

•         one teaspoon of sea salt

•         one teaspoon of black pepper

•         fresh Queso cheese for garnish

 

Directions:

Add the mushrooms, spinach, red bell pepper, onion, garlic and sweet potatoes into slow cooker.  Toss to mix.  Add in crumbled Chorizo.  In a bowl whisk together lime juice, beef stock, and tomato paste.  Pour into slow cooker.  Season with chosen herbs and spices and sea salt and pepper.  Garnish with fresh crumbled Queso cheese when serving.
