On a chopping board, lay a length of string twice the length of the turkey fillet. Arrange 4 more lengths of string to tie around the width of the fillet. Lay 8 rashers of bacon and secure with strings, so they don’t pull apart when you wrap the turkey. Grind over some black pepper and scatter with 1 tbsp. of thyme.
On top of the bacon, place a turkey fillet then wrap the bacon around it and tie the strings to hold everything in place.
In a frying pan, heat the oil.
Then fry the fillet until browned on all sides then place on a plate. Meanwhile, tie the other one then brown that too. Set aside with other breasts.
Add carrots and onions to the pan and cook until starting to color.
Add the vegetables into the slow cooker then add the mushrooms, bay leaves and arrange the turkey fillets on top.
Pour the stock and wine into a frying pan, bring to a boil then pour into the slow cooker.
Cover and cook on low until the internal temperature of the meat reaches 75C, about 3 to 4 hours.
Transfer the turkey breasts onto a plate and cover with foil.
Make a smooth liquid by mixing the flour with 4 tbsp. water.
Strain the cooking juices from the slow cooker and whisk in the flour mixture. Then whisking over medium heat, bringing to a simmer and make a thin gravy.
Slice the turkey breasts and serve with vegetables, top with black pepper and thyme.
