Savory tomatoes and rich avocados are blended to a smooth consistency becomes a satisfying base for the sweet pop of each corn kernel. This flavorful soup can be served hot for a comforting meal on a cold, wet day or chilled for a refreshing and filling meal during the summer heat.
1 tomato, peeled and chopped
½ c sweet corn kernels
2 cloves garlic
¼ c raw walnuts
1 tbsp chia seeds
2 tsp soy sauce (use Tamari sauce if going gluten-free)
1 c vegetable broth
1 Hass avocado, pitted and cubed (retain some for garnish if you choose)
salt and pepper to taste
fresh or dried dill for garnish
In a blender, puree tomato, garlic, walnuts, soy sauce and avocado until smooth.
Mix pureed mixture, vegetable broth and corn in a saucepan. Bring to a boil to heat through.
Season to taste with salt and pepper.
Garnish with avocado and dill before serving.
