1 can brown lentils, drained and rinsed
1 can pickled beets, drained and cut in cubes
5 oz baby rocket leaves
¼ cup walnuts, toasted and roughly chopped
4-5 green onions, chopped
1 garlic clove, crushed
3 tbsp olive oil
2 tbsp lemon juice
salt and black pepper, to taste
Heat olive oil in a frying pan and gently sauté green onions for 1-2 minutes or until softened. Add in garlic and lentils. Cook, for 2 minutes then add in beets and cook for 2-3 minutes more.
Combine baby rocket, walnuts and lentil mixture in a large salad bowl. Sprinkle with lemon juice, toss gently to combine and serve.
