1 cup all-purpose flour
1 tbsp sugar
2 tbsp baking powder
Pinch of salt
1 cup soy milk
1 scoop of a Vegan protein powder
2 tbsp vegetable oil
Your choice of topping
Place the flour, sugar, protein powder, baking powder, and salt in a bowl and mix together. Then add the soy milk and oil before mixing further until the batter is smooth. An electric whisk can make this job easier!
To make a pancake pour approximately half a cup of the batter onto a hot griddle – making sure it is oiled first. It should take around two minutes to cook one side of the pancake; you will know it is done as you will see bubbles on the top surface of the pancake. Turn the pancake over and cook the second side.
It is a good idea to have the oven on a low heat whilst making the pancakes. As each one is ready you will be able to place it on a tray in the oven and keep it warm until they are all done.
Eat the warm pancakes immediately with maple syrup and the fruit of your choice - if desired.
