1 cup cooked brown rice

6 green bell peppers, washed, halved, and seeded

6 slices of wheat bread, crumbled

1 small yellow onion, diced

3 tomatoes, diced

6 ounces vegan jack cheese, diced

1/2 pound meatless crumbles

Basil, to taste

Salt and freshly ground black pepper, to taste

 

Directions

1.       Preheat oven to 350 degrees F.

2.       Cook rice according to package directions.

3.       Place peppers on a baking pan, open side up.

4.       Add the breadcrumbs to a large bowl. Season with salt, pepper, and basil. Mix together well.

5.       Then, to the same large bowl, add cooked brown rice, onion, tomatoes, cheese, and meatless crumbles. Mix together to combine.

6.       Spoon the mixture into the peppers on the baking pan, and place them in the preheated oven. Bake for 30-40 minutes; or until peppers become tender.

7.       Remove from the oven and cool slightly prior to serving.
