Ingredients (4 Servings)



5 fresh mushrooms, sliced


1 pound firm tofu, cubed


1 tablespoon peanut oil


1 small head broccoli, chopped


1 small red bell pepper, chopped


1/2 cup peanut butter


1/2 cup hot water


2 tablespoons vinegar


2 tablespoons soy sauce


1 1/2 tablespoons molasses


ground cayenne pepper to taste





In a large skillet put oil and heat on medium heat. Add broccoli, red bell pepper, mushrooms and tofu and mix well for 5 minutes by stirring.
Take a small bowl, mix peanut butter, hot water, vinegar, soy sauce, molasses and cayenne pepper. Add vegetables and tofu. Simmer and cook until the vegetables are tender.
