3 cups flour
1 cup white sugar
1/2 cup brown sugar
2 teaspoons ground cinnamon
2 teaspoons baking powder
1 teaspoon sodium bicarbonate
1 teaspoon ground nutmeg
1 teaspoon salt
2 cups ripe bananas (mashed)
1 cup canola oil
1 cup full-fat coconut milk
1. Pre-heat the oven up to 350 degrees F and lightly grease 12 muffin cups or line with paper liners.
2. In a large bowl, add and combine the all-purpose flour, sugars, cinnamon, baking powder and soda, ground nutmeg and salt altogether.
3. Next, in a separate bowl; stir the mashed bananas, canola oil and coconut milk together.
4. Mix the banana mixture into the flour mixture and stir until just combined.
5. Now, pour the batter into prepared muffin cups.
6. Finally, bake in oven for about 30 to 35 minutes.
