Put all the dry pancake ingredients in a bowl. Whip in all the liquid ingredients (do not add the coconut milk).
Gradually add the coconut milk. You will need to add as much coconut milk as you need until you see the preferable consistency.
Preheat a consistency and coat with grease with coconut oil.
Pour a spoon of a pancake batter onto the griddle. Make the pancakes about 3-4 inches in diameter as it will be easier to operate them. Bake for 2-3 minutes, then turn them on another side for an additional 1-2 minutes.

Heat the oven to 350°F.
Mix all together salt, baking soda and almond flour
Whip all together the honey, coconut milk, coconut oil, and egg.
Then mix the wet and the dry ingredients together, but not that much.
Add blueberries into the dough.
Add the prepared dough into the muffin tin and bake
Bake until a toothpick inserted into the center comes out clean, about 20-25 minutes
Set pan over a wire rack to cool. Wait until muffins are completely cool before removing from the paper liners. 

Recipe makes 6 muffins. Store in an airtight container in the refrigerator.
