What Does Authentic Mean?

The signs proclaim “Authentic English Fish and Chips” in two foot high flashing neon lights but what they serve is fish fingers with shoestring fries. Trust me, that’s not authentic. I even had fish and chips in Phoenix, Arizona where the batter was made from corn meal.

You have a better chance of finding an honest politician in Washington, DC than finding authentic fish and chips in America.

What does that mean anyway? What is authentic English fish and chips?

Even in England the fish and chips range from mediocre to outstanding. At least you will never get a corn meal batter - Ugh!

When I was growing up in England we had access to at least three fish and chip shops (local chippies) within easy walking distance of our house.

Our favorite shop was next door to the Flying Eagle Pub. It’s gone now and the Flying Eagle has become an Indian restaurant. But I still fondly remember picking up six-pennyworth of chips as I walked home from school.

Chips

If you want authentic, you need to start with the chips. They should be hand cut, then soaked in salted water for an hour or so to get the starch out. They must not be the awful shoestring fries that are cold before you even have a chance to eat them. Proper chips, for your authentic fish and chip dinner, are thick, crisp and golden brown.
