Most of the books in this series are more about the method and ingredients of the recipes  rather than exact quantities. This one is a little different as it is all about baking and baking just won’t work unless you get the chemistry right.

These are my mother’s recipes, modified for the North American measuring system. I have also changed any reference to self-raising flour because it is not widely available here.

I also want to thank my wife Vicky for developing the bread machine versions which will help to make these classic British favorites easier to make and therefore more available to busy cooks.
