For the Quinoa, rinse the quinoa then cook it with the ½ teaspoon of sriracha, ½ teaspoon of sesame oil, ¼ teaspoon of salt, and 1 cup of water. Let it boil on average heat then let it cook at low medium heat covered partially for 10-15 minutes. Fluff it and keep it ready.

 

For the Roasted Cauliflower, in a bowl mix the 1 teaspoon sesame oil, 1 teaspoon oil, 1 teaspoon Sriracha, and ¼ teaspoon ginger powder. Toss in the Cauliflower. Sprinkle a little salt and let it bake at a preheated temperature of 425°F for 20-25 minutes.

 

For the Collard Greens, while the cauliflower is roasting, heat the oil in the pan on average heat. Add in the garlic, salt, and collard greens then let it cook for 1 minute. Add in the water, mix it, cover it, and let it cook on low medium heat until it turns lightly wilted.

 

For the Almond Sriracha Sauce, add the 3 tablespoons of almond butter, 2 teaspoon of minced ginger, ¼ teaspoon of garlic powder, 1-2 teaspoon of sriracha, 1 teaspoon of apple cider vinegar, 2 teaspoons of maple syrup, 2 teaspoons of extra virgin olive oil, ½ teaspoon of sesame oil, 3 tablespoons of coconut milk and a large pinch of salt in a blender. Blend it well and use. Taste and adjust the taste with salt and spice.

 

In a bowl, arrange everything and serve it with a considerable amount of drizzle of the dressing sesame seeds, and cilantro leaves
