1 pound cubed stew meat, trimmed

 

1 chopped sweet onion

 

2 minced garlic cloves

 

2 teaspoons grated ginger

 

½ cup chopped cilantro

 

1¾ cups fat-free beef broth

 

2 teaspoons curry powder

 

½ teaspoon salt

 

½ teaspoon black pepper

 

1 tablespoon cornstarch 

 

1 tablespoon water

 

Procedure:

 

In a slow cooker cook beef for about 8 to 10 minutes on medium-high heat until browned all over. 

 

Transfer to a plate. Cook onion, garlic and ginger for about 5 minutes in the same slow cooker until softened. 

 

Add cilantro, beef broth, curry powder, salt and pepper. 

 

Return beef to the slow cooker. 

 

Cover with lid and turn cooker on low.
