Ingredients:


 

1/2 White Onion

1 cup Carrots

1 Celery Stalk

3 cloves Garlic, minced

2 Tomatoes

1 cup Navy Beans, rinsed

3 cups Vegetable Broth

1/4 cup Fresh Italian Basil

1 Sprig Fresh Rosemary

2 Bay Leaves

1 Zucchini

2 cups Spinach

2 cups Cooked Elbow Pasta


 

 

 


 

Instructions:


 

1)     In your blender, puree the navy beans and one cup of vegetable broth together. Add the puree to your slow cooker.


 

2)     Next, chop all of the vegetables and add them all except the zucchini and spinach to your slow cooker. Also add the garlic, vegetable broth, italian basil, rosemary, and bay leaves.


 

3)     Cover and cook on low for 6 hours, then add the zucchini and spinach. Cook for another 30 minutes, then add the cooked pasta and stir. Allow the soup to cook for another 5-10 minutes, then remove the rosemary and bay leaves. Re-season with salt and pepper if needed then serve.
