Ingredients:

1 cup long grain white rice

2 cups water

1 small onion, chopped

1 clove garlic, crushed

1/4 head cabbage, cored and shredded

2 tomatoes, diced

1 tbsp paprika

1/2 cup parsley, finely cut

2 tbsp olive oil

salt, to taste

black pepper, to taste

Directions:

Heat the olive oil in a large pot. Add the onion and garlic and cook until transparent. Add the paprika, rice and water, stir and bring to boil.

Simmer for 10 minutes. Add the shredded cabbage, the tomatoes, and cook for about 20 minutes, stirring occasionally, until the cabbage cooks down.

Season with salt and pepper and serve sprinkled with parsley.
