1.2 lb young okras

1 lemon

½ bunch parsley, chopped

2 tomatoes, sliced

for the dressing:

3 tbsp sunflower oil

½ tsp black pepper

salt, to taste

Directions:

Trim okras, then wash and cook them in salted water until tender. Drain and set aside to cool.

In a small bowl mix well the lemon juice and sunflower oil, salt and black pepper.

Arrange okra and tomatoes in a bowl then pour over the dressing and sprinkle with chopped parsley.
