1½ cup of gluten free rolled oats
1 teaspoon of cinnamon
½ cup of pumpkin
¼ teaspoon of nutmeg
¼ cup of maple syrup
¼ teaspoon of ginger
1/3 cup of cranberries, raisins, or pecans
Preheat your oven to 350 degrees. In a food processor, process the ingredients you have except the cranberries then ensure they are mixed well until nicely combined.
Then add in the cranberries and pulse just a few times until just mixed. Scoop this batter using a spoon into lined muffin cups.
Let the muffins bake for 10 minutes in the preheated oven. Let cool before removing from pans. Enjoy!
They can keep in the fridge for a couple of weeks. You can also freeze them for way longer.
