Light, airy, fluffy, and egg free? Is this magic? This dessert is pure elegance and if served in rather grown up glasses, this can be a great dinner party dessert. Serve with fresh fruits and a blob of whipped coconut cream and if you’re feeling a little cheeky, mix a little of your favorite tipple in to the mixture before chilling.
If serving to children, find some colorful cups, a selection of sweets, and you have a birthday party pudding that everyone will love.
Prep Time: 15 minutes, plus chilling
1 8oz. can of chickpea water (keep the chickpeas for the Blondie Recipe!)
3.5oz dark vegan chocolate
2 Tbsp. powdered sugar
Put the chickpea water into a clean bowl and whisk until it froths up like an egg white. Keep going as it goes really white! Over a pan of simmering water, melt the chocolate. Add a small amount to the whipped chickpea water and gently fold in. Add the rest gradually and fold in the powdered sugar too, careful not to knock too much of the air out.
Divide between 4 glasses and chill for 2-3 hours at least.
