For the topping:

1. For the topping: Combine the cinnamon, sugar, and flour in a small bowl. Add the butter. Toss to coat. With clean fingers, work the ingredients until it resembles coarse crumbs. Set aside.

2. Lightly grease a 6-quart crockpot using cooking spray. Whisk the vanilla, pumpkin pie spice, eggs, pumpkin, and milk in a glass measuring cup or bowl. Layer bread cubes on the bottom of the pot. Evenly spread the pumpkin mixture over the bread. Spread the topping on top. Cover; cook for 1-2 hours on HIGH or for 3-4 hours on LOW.
