3/4 cup half-and-half

20-ounce bagged refrigerated cooked shredded hash brown potatoes

12 eggs

1/4 teaspoon freshly ground black pepper

1/2 teaspoon salt

1/2 teaspoon crushed red pepper flakes

1/2 cup chopped roasted red peppers or bell pepper (red)

1/2 cup green onions, chopped

1 pound pork sausage; cook and drain

1 cup shredded Colby cheese

1 cup shredded Cheddar cheese

 

1. Line a 4 or 5-quart crockpot with liner or foil folded into thirds. Grease it using cooking spray. Whisk the half-and-half, salt, pepper, and eggs in a medium-sized bowl. Reserve 2 tablespoons of the green onions and 3/4 cup of the cheddar cheese; set aside. Stir together the remaining cheeses in a small-sized bowl.

2. Layer 1/2 of the potato, sausage, chopped peppers, cheese, and green onion in the bottom of the pot. Repeat the layers. Spread the egg mixture over the layers. Cover; cook for 2 1/2-3 hours on HIGH or for 4-5 hours on LOW or till the center of the dish reaches 160Fand the egg is set. Spread the remaining green onion and cheese on top. Cover; cook for 10 minutes or till the cheese melts. Loosen the foil using the edges of a sharp knife and remove. Serve.
