You’ll Need:

1 1/2 cups frozen broccoli florets, thawed
1 1/2 cups grated cheese (cheddar, Monterrey Jack, vegan)
3 large eggs
4 slices cooked bacon
1 1/2 cups whole milk (dairy or nut-based)
1/3 tsp Dijon mustard
3/4 Tbsp mayonnaise
Water
Sea salt
Freshly ground black pepper
Nonstick cooking spray

 

How to Prepare:

1.  Lightly grease a casserole dish using the nonstick cooking spray. Arrange the broccoli in a single layer on the dish. Spread the cheese on top, then arrange the bacon on top of the cheese.

2.  Crack open the eggs into a bowl and whisk. Beat in the milk, mustard, mayonnaise, and a dash of salt and pepper. Pour the mixture on top of the layer of bacon.

3.  Place the cooking rack into the Crock Pot. Put the casserole dish on the rack. Pour just enough water into the Crock Pot to submerge the lower half of the casserole dish.

4.  Cover and cook for 4 hours on low. Remove the cover and take out the casserole dish. Slice and serve.
