¼ cup unsalted butter, melted
¼ teaspoon cinnamon
1 cup light brown sugar, packed
12 slices white bread
5 large eggs
1 ½ cups blueberries, fresh or frozen
1 ½ cups milk, whole
1 tablespoon vanilla
½ teaspoon salt
Optional Toppings: powdered sugar, whipped cream, additional blueberries, syrup
Directions:
Step 1: Prepare the crockpot by spraying nonstick cooking spray along the bottom and sides.
Step 2: In a small bowl, combine the butter, cinnamon, and brown sugar until well incorporated. Sprinkle about 1/3 of this mixture evenly along the bottom of the crockpot.
Step 3: Lay 6 bread slices on top, making sure they are in a single layer. Sprinkle another 1/3 of the brown sugar on top of the bread slices.
Step 4: Spread the blueberries on top, followed by the remaining bread slices and the remaining brown sugar mixture.
Step 5: In a mixing bowl, whisk the milk, eggs, salt, and vanilla together. Pour this mixture into the crockpot.
Step 6: Cover the crockpot and cook on low for 3 to 4 hours. Serve with the desired toppings.
