Ingredients

½ teaspoon vanilla extract
¼ cup coconut flour
½ teaspoon salt
¼ teaspoon baking soda
¼ cup macadamia nuts, chopped (optional)
¼ cup chocolate chips
3 tablespoons coconut oil, melted
3 eggs
1 tablespoon raw honey
1½ cups chopped ripe bananas
¼ cup unsweetened shredded coconut

Directions

1 Preheat the oven to 385 degrees and line a muffin tin with 6

baking cups. Mix the coconut oil, eggs, honey, bananas, shredded coconut, and vanilla in a bowl.

2 In a separate bowl, mix the coconut flour, salt, and baking soda.

3 Using a spatula, slowly mix the dry ingredients into the wet ingredients until thoroughly combined.

4 Fold in the macadamia nuts and chocolate chips (if desired).

5 Bake until a toothpick inserted into the center comes out clean, about 12 to 15 minutes.
