Chicken with Sweet Potato Hash Browns

Two sweet potatoes, peeled and diced into small pieces

Two tablespoons olive oil

½ small onion, diced

Four chicken thighs, cooked, meat pulled off bones and chopped or shredded

One teaspoon each, dried thyme and oregano

Freshly the ground black pepper, to taste

Either in a microwave,  steamer, steam sweet potatoes til soft and easily pierced with a fork. Divide in half, mash half with a fork. In a skillet, heat oil over medium heat. Add onion, cook till soft. Add chicken and spices, except pepper, and combine. Add both sweet potato mixtures to the pan and blend the mixture thoroughly. Flavor with freshly ground black pepper. Continue cooking until browned on the bottom, and then flip to cook the other side until browned. Break up into small pieces and serve.
