1 c. almonds

1 serving bread: Atkins Cuisine

1/8 tsp. cream of tartar

5 eggs

½ c. sugar substitute

1 tsp. baking powder

2 Tbsp. water

1 ½ cup cherries

6 Tbsp. cream

1/3 c. hazelnut syrup

2 oz. chocolate, unsweetened

 

Directions:

 

Heat up the oven to 350 degrees. Start by spreading out the almonds and then toasting them for around 10 minutes before moving them to the food processor. In the food processor you should add the cream of tartar, baking powder, and bread and mix together.

 

Take a baking pan and line with some wax paper and dust with the crushed almonds. Next you can combine about ¼ of the sugar together with the 5 eggs yolks and beat for about 3 minutes. In a separate bowl you will need to beat the egg whites until a peak forms and then add the rest of the sugar and continue beating for another 3 minutes.

 

Fold in the nuts and the egg whites to the egg yolks, alternating between the two and then spread into the pan. Bake this mixture for about 20 minutes. Let cool and then take the cake out and place it on a plate.

 

Next you will combine the cream, hazelnut syrup and chocolate and then let them simmer; whisking the mixture for a few minutes until the chocolate melts before adding in 2 Tbsp. of water. While that is simmering you can take the 4 Tbsp. of cream and whip them into soft peaks.

 

When it is time to serve you can cut up the cake, top with the sauce and add some cream and cherries on the side.
