- ½ cup semi pearled farro
- 1 cinnamon stick
- 1 cu brewed coffee
- 1/8 teaspoon salt
- ¼ cup dark chocolate
- 1 ½ tablespoons sugar
- 2 egg yolks
- ¼ cup light cream
- 10 tablespoons whipped topping, light
Pour water into a saucepan and farro. Bring to a boil. Let simmer for 5 minutes. Remove from heat. Let cool for 15 minutes and then transfer into the food processor. Process until smooth.
Pour the farro back into the saucepan and add cinnamon, coffee, and salt. Let simmer for 20 minutes. Stir the mixture every 10 minutes. Remove cinnamon stick. Pour the chocolate pieces and add sugar.
Meanwhile, in another bowl, beat eggs and light cream. Pour the hot farro onto the egg mixture. Bring to a boil whilst stirring. Cook for 3 minutes or until thickened.
