Directions

Place butter or oil in a small saucepan and heat until it starts sizzling.
Add the vegetables and sauté for 2 minutes while stirring frequently.
Add the chicken and continue sautéing to allow absorbing fat for about 1 minute.
Pour in the broth then stir occasionally.
Add a pinch of salt and pepper to taste; and if desired, add a dried herb such as basil, sage or thyme. Reduce heat and simmer for 5-10 minutes on low heat.
