1 ½ lb. halibut, cut into 1” slices
2 tbsp white wine vinegar
1 large red bell pepper, sliced
½ tsp salt
3 tbsp prepared basil pesto
When ingredients are ready, preheat your broiler. In a shallow dish or bowl, add fish and bell pepper; mix lightly and sprinkle with vinegar and basil pesto. Set the mixture aside for about 5 minutes. Arrange bell pepper and halibut on skewers. Drizzle with salt and set aside. Prepare the jelly-roll pan by spraying with cooking spray. Put skewers on the pan and broil for about 4 minutes. Turn and broil for more 4 minutes or until ready.
