Though the science behind intermittent fasting was briefly explained to you at a very elementary level in the preceding chapter and introduction, I will now break things down for you even more. That way, you can fully understand how this diet works, and how your body responds to it.

 

Intermittent fasting is dependent on your body transferring from the fed state to the fasted state. These terms may be somewhat unfamiliar to you right now, but they are actually fairly simple to understand. While the fed state focuses solely on breaking down the foods you eat and typically lasts for up to five hours, the fasted state occurs after you eat and takes much longer to kick in. In fact, most often times, your body won’t enter the fasted state until half a day (12 hours) after your last meal. When in the fed state, it is difficult for your body to burn fat. However, when in the fasted state, it is very easy for your body to burn fat. This is not only because of the time frame, but also because of your insulin levels, which are high during the fed state, and low during the fasted state. This goes to show why the full 16 hour fast is critical to this diet, why fat falls off so quickly, and why a change in the foods you consume isn’t necessary.

 

Another factor that goes into intermittent fasting, are our insulin levels. When our insulin levels are up, we can store excess energy in our liver a lot easier. While being stored in the liver, our sugars are linked to what is called “glycogen”, and though there is limited storage space, our liver transfers the extra glucose into fat. As you may have guessed, there is no limit to the amount of fat that can be created here, which goes to show why people with a consistently high sugar intake tend to gain so much weight so quickly.
