1 slice wholemeal bread

1 small egg
1 drop of vinegar

Pinch of salt

56g (2 oz) button mushrooms, wiped clean with a damp paper towel

1- cal vegetable oil spray

 

Bring to the boil a half-filled medium saucepan of salted water.

Put a slice of toast into a toaster

Spray a frying pan with 4 sprays of 1-cal oil and heat gently

Break the egg into a cup and add a drop of vinegar (this helps the egg to keep its shape in the pan).

Whisk or stir the boiling water vigorously to make it swirl and drop the egg into the middle.

Reduce the heat to low and cook for about three minutes.

Meanwhile, fry the mushrooms on a medium heat, keeping them moving in the pan until golden (approximately 3 minutes).

Use a slotted spoon to remove the egg from the water and drain on a piece of kitchen towel

Place the egg in the centre of the toast, surround with the mushrooms and serve immediately.
