Ingredients

1 lb. trimmed flanked steak

1 ¼ tsp cumin, ground, divided

1 tsp olive oil

2 cups cherry tomatoes, halved

1 tsp bottled garlic, minced

1 cooking spray

¼ cup cilantro, fresh, chopped

¾ tsp salt, divided

1 jalapeno pepper, seeded, minced

1/8 tsp red pepper, ground

Direction

Before you do anything, mix together red pepper, 1 tsp of cumin, and ½ tsp of salt. Brush cumin mixture all over the flank steak. Prepare a broiler pan by spraying with cooking spray. Put the steak in the broiler pan and broil for about 5 minutes. Turn and broil for more 5 minutes or until tender. Transfer the steak onto a chopping board and chop into thin slices and set aside.

In a skillet, add olive, and heat over medium. When ready, sauté garlic and jalapeno for about 1 minute. Add all other ingredients with the exception of cilantro and steak. Let the mixture cook for about 3 minutes or until the vegetables are tender. Turn off heat and mix in cilantro. Divide into individual plates and top each serving with steak slices.
