Gluten free diet is not only meant for those with the disease or the allergies, but it can also for those who want to maintain a healthy diet and incorporate a lot of protein and carbohydrates in to their diet. Usually, Gluten is the protein that is found in wheat, which gives the elasticity to dough and helps it maintain its shape and rise. Gluten is also a complex combination of two proteins known as Gliadin and Glutenin that are joined by starch components and is found in various grains. While Glutenin is the major type of protein found in wheat flour, Gliadin is responsible for the bread to rise properly and this makes for about 47% of the total protein content in the grain.
