Buttery Onion And Mushroom Frittata

A hearty breakfast frittata that you can enjoy with your family.

Servings: 4

Total Time: 1 hour

Ingredients:

1 medium red onion, chopped

1 pound of fresh mushrooms, sliced

3 tablespoons of olive oil

3 tablespoons butter

1 garlic clove, minced

1 shallot, chopped

1/4 cup of shredded Parmesan cheese

1/2 cup of shredded cheddar cheese

8 large Eggs

1/4 teaspoon salt

1/4 teaspoon pepper

3 tablespoons of heavy whipping cream

Directions:

1. Heat butter and oil in a 10-inch skillet on medium heat then sauté onion and mushrooms until softened.

2. Reduce heat to medium-low and cook for 30 minutes with occasional stirring.

3. Add garlic and shallot then cook for 1 minute longer.

4. Reduce heat and sprinkle the Parmesan and cheddar.

5. Whisk the eggs, salt, pepper and cream in a large bowl then pour over top. Cook covered for 5-6 minutes until eggs are almost set.

6. Uncover the skillet, place in broiler for 2 or 3 minutes until eggs are set.

7. Let cool for 5 minutes before cutting into wedges.
