This is a short ebook with the most famous recipes of the different members of the European Union along with some information of all EU countries. A book about the current situation of  the European Union, written in a fun and informal tone,  seeks to express their love to the European Union through food.

Summary of the book

The love story of the old continent seems to have reached an end, one of their life-long members has asked for a divorce. The rest of the members of this messy marriage are not happy, things have been pretty tough lately and this break-up will make this complicated love affair even more difficult. The union is probably facing the biggest challenge of its history and something must be done to avoid a crisis of unimaginable consequences. 
Someone said a long time ago that there is no sincerer love than the love for food, so what better way to get us Europeans back together again than by starting with a love for each other’s food? This book is a culinary journey through the heart of the European Union that will help you cook the most delicious dishes of the 28 members. As food brings people together we hope cooking our neighbour’s dishes will help build strong bonds between countries so we can work together to reconquer the EU as a space of freedom, justice and democracy.

Cyprus

Cyprus is an island in the Eastern Mediterranean Sea, south of Turkey. After Sicily and Sardinia, Cyprus is the third largest island in the Mediterranean Sea. Although the island is geographically in Asia it’s politically a European country and is a member of the European Union.

The island hosts two main ethnic groups, the Greek Cypriots and the Turkish Cypriots, and they have a bit of a mess there. In the 60’s they gained independence from the UK, but then they had some fights between them and all this ended with Turkey occupying 40 % of Cyprus. So now the island is divided in two and one part is under the control of Turkey but the whole island is a member of the European Union. Like I said before … a mess.

I asked some Cypriots what is the most popular food of the country and I got different answers, all the dishes sounded really delicious but the most repeated suggestion was anything with halloumi. So I decided to follow their advice.

Grilled Halloumi and Watermelon Salad

Serves 4
Prep Time 10 min
Cooking Time 5 min

Ingredients

1 kg (2.5 pounds) of fresh watermelon chunks, sliced
250 gr (9 oz) of halloumi cheese, sliced
400 gr (14 oz) of fresh collard greens (arugula, spinach, cabbage, mint...)
1 tablespoon of pistachios or any other nuts, roughly chopped
1 tablespoon of olive oil
1 tablespoon of fresh lemon juice
Salt and pepper, to taste

Preparation

Heat a grilling pan and grease it with a cooking spray then grill in it the halloumi cheese for 2 min on each side.
Toss the collard greens with lemon juice and olive oil in a mixing bowl and season them with a pinch of salt and pepper.
