1. Preheat the oven to 375°F. Coat an 11-by-7-inch baking dish with cooking spray.

2. In a large skillet over medium-high heat, heat the olive oil. Add the onions and cook, stirring, until they begin to soften, about 3 minutes. Add the bell pepper and cook for about 2 minutes more. Stir in the squash and garlic and continue to cook, stirring occasionally, for about 5 minutes more.
